Today we will prepare crispy Semolina jalebi,
Preparing it is really easy, and it tastes delicious too.
Let's start preparing Semolina jalebi.
To prepare semolina jalebi let's first prepare the batter.
We have taken 1 cup fine semolina,
put it in a mixing bowl, add 1/4 cup refined flour too,
add 1/2 pinch orange food color,with 1/2 cup whisked curd,
add the curd and mix well, add a little water.
Batter is ready now,
The batter is a bit dense not very dense,
Cover and keep it aside for 20 to 25 minutes for the semolina to puff up.
after that prepare the jalebis.
For preparing this quantity of batter we have used 1/2 cup whisked curd, and 3/4 cup water
Keep the batter aside,
Till the batter puffs up let's prepare sugar syrup for the jalebis.
For making sugar syrup put the sugar in a utensil,
we have taken 1.5 cup sugar.
Add 1 cup 2 tbsp water to it,
Turn on the flame.
Cook the sugar syrup till the sugar dissolves completely.
Stir it at regular intervals.
Sugar has completely dissolved in the water.
Check the sugar syrup.
Pour 1 to 2 drops of sugar syrup in a bowl,
and when it cools down, stick between fingers.
For Jalebis, we need singl thread sugar syrup,
Stick a little sugar syrup on your fingers,
Stick the sugar syrup between your index finger and thumb.
after cooling down single thread should form in the sugar syrup,
Sugar syrup is forming a single thread.
Sugar syrup for the jalebis is ready.
This is very clear sugar syrup,
You do not need to do anything, the sugar syrup is ready.
If there is impurity in the sugar syrup then ,clear it.
For that add 1 tbsp milk, to the sugar syrup and
and remove the impurities coming up with the froth,
giving a very clerar sugar syrup.
Now add cardamom powder to it,
the powder is prepared by peeling 4 cardamoms.
Add 1 tsp lemon juice to it, due to this the syrup doesn't set.
Sugar syrup is ready, now place the syrup over a jali stand,
30 minutes are over now,
semolina is puffed up and ready,
Batter is dense as required for the jalebis.
Add 1/2 tsp baking powder and mix well.
Batter for the jalebi ready now,
fill it up in a cone, meanwhile heat up the ghee for frying the jalebis.
Fill the batter in a cone.
Traditionally a thick cloth was used which was double fold and
was pierced through and sealed on the sides,
and jalebi was prepared so,
Now you can make it with any cone or any polythene sheet,
fill the batter and make the jalebis,
Slightly cut it, a very small cut.
Check the ghee, pour a little batter in the ghee.
Ghee is rightly hot as the batter is floating over it,
Let's start making the jalebis.
To make the jalebis, hold the cone like this and rotate like this.
Fill as much jalebis as they fit in the wok.
Fry till the jalebis are golden brown in color.
Jalebis are slightly brow from below, now flip them.
Jalebis are golden brown in color, take them out.
To take it out ,take a slotted laddle, and place over it,
so that the extra oil drains back to the wok.
Put the jalebis in the sugar syrup,
drench it in sugar syrup, till the jalebis absorb the syrup,
meanwhile make rest of the jalebis as well.
Prepare the jalebis in the same way,
Jalebis have absorbed the sugar syrup, take them out from the syrup.
Lift it and place on the ladle.
Now place it in a plate.
All the jalebis are fried and ready, drenched in sugar syrup and taken it out.
Crispy and sumptuous Semolina Jalebis are ready.
Making them is really easy and quick.
Whenever you crave for jalebis you can make it instantly.
Be a little cautious, do not make the batter very thin.
Keep it a little dense for Jalebis, not very dense though.
Take care of the sugar syrup, prepare single thread sugar syrup.
Make sure the ghee is rightly hot for frying the jalebis,
keep the flame medium and make the jalebis.
If the ghee is less hot,then the jalebi won't cook well.
If the sugar syrup is thin then
the jalebi will turn out soft when drenched in syrup.
If the sugar syrup is too dense, of two threads,
then the jalebis won't absorb the syrup, will just get coated on outside.
Be a little cautious and you will make perfect jalebis.
