Hello, I am Madhura and welcome to MadhurasRecipe Marathi
Let's see how to make dosa today. Most imporatnt step is how to make dosa batter. Let's see.
Let's see what all ingredients are required. Take 2 1/2 cups rice. You can use any rice.
The crispier dosa you want increase quantity of rice and decrease the quantity of urad dal.
I have taken 2 1/2 cups rice. For 2 1/2 cups rice, I have taken 1 cup urad dal. 1/2 cup pohe,
1 tbsp chana dal and 1/4 tsp fenugreek seeds. We are not soaking pohe now. Pohe will be required at time of grinding.
To begin with with take rice and wash them really good with water for 3-4 times. I have washed rice and added water in it.
Keep it aside. Take urad dal and add chana dal. Chana dal gives nice colour to dosa. Add 1/4 tsp fenugreek seeds.
Wash it really good with water. Dal has been washed. Add water in dal and soak dal and rice separately for about 4-5 hours.
I have soaked dal and rice in water for about 4-5 hours. Let's grind it now. To begin with I will grind dal first.
Grind dal and rice separately. Add minimum water while grinding dal. Let's grind dal. Dal is finely ground.
Do not grind dal coarse. It should be nice and fine. Take the ground dal into a pot. I have washed 1/2 cup pohe really good.
No need to soak poha. Just wash them really good. Let's grind rice now. Rice will have to be ground in 2 batched.
I will grind half rice and half pohe first. Then will grind remaining rice and pohe. Add half pohe.
Pohe give nice net to dosa. Grind it. Rice has been finely ground. Take them out into the pot having ground urad dal.
I will grind remaining rice in the same way. Add salt to taste in the batter and mix well.
Mix everything really good. You can add a little water to adjust the consistency. You also can add 1/2 tsp sugar if you want.
Sugar gives nice brown colour to dosa. After mixing well, cover it and ferment the batter for about 10-12 hours.
I have fermented dosa batter over night. 13-14 hours have passed. Batter was in smaller pot which was over flowing.
So I transferred it into bigger pot. You can see. It is nicely fermented. We had added salt while fermenting yesterday.
No need to add salt now. We require dosa batter consistency. If you feel batter is too thick, then add water to adjust consistency.
But this is perfect consistency for me. Let's make dose now. For making dosa, I have heated a pan on medium heat.
Add a little oil and spread it really good. Add dosa batter at the center of pan and spread it.
Roast dosa on medium heat until it turns nice deep golden. Dosa has got nice net. If you want to make even dosa,
Then take a spatula and spread the batter evenly. Add a little oil. Dosa has turned nice brown.
Looking yummy. Let's take it out. You can see. It has got nice colour and crisp. Let's make next dosa now.
While adding dosa on pan, it should not be too hot. If the pan is too hot, then batter turns into lumps immediately after adding in pan.
Batter gets cooked immediately. Dosa is not properly spread. To avoid that reduce the temperature of the pan.
One option is, sprinkle water and clean it with napkin. But non stick pan get spolit in this. Mostly I avoid it.
I turn off the gas while taking the dosa off the pan, wait for about a minute and then add batter on it.
Dose are looking just yummy. It has got nice crisp and colour too. Let me try it. You can see.
Dose have got nice net. It has got nice crisp but at the same time crisp is not hurting in the mouth.
Mostly when we eat crispy dosa in hotels, it hurs a little in our mouth. It has got perfect crisp along with nice softness.
Yummy. You can have dose with coconut chutney or sambar. I have already uploaded coconut chutney and sambar recipe.

Add minimum water while grinding. • Transfer the ground dal into a pot. • Take pohe and wash them really good. No need to soak the pohe. • Blend rice and pohe together fine. Do not keep it coarse. • Take the ground rice and pohe out into the pot containing ground dal. • Add salt to taste and mix well. • Add a little water if required to adjust the consistency. Mix well. • You can add 1/2 tsp sugar in the batter if you want. • Cover and ferment the batter for about 10-12 hours or overnight. • After fermentation mix the batter well. • If you feel the batter is a little thick you can add water to adjust the consistency. • Heat up a pan on medium heat and add a little oil on it. Spread the oil well on the pan. • Add dosa batter at the center of the pan and spread it. • Roast the dosa on medium heat until it gets nice golden color. • Spread a little oil on dosa. • Take it off the pan and dosa is already. • You can serve the dosa with coconut chutney, sambar. Tips: • If you want crispier dosa, then increase the quantity of rice and decrease the quantity if dal. • Chana dal gives nice colour to dosa. • Pohe give nice net to dosa. • Sugar gives nice brown color to dosa. • If you want to make even dosa, then spread the batter with a spatula. • The pan should not be too hot while making dosa. If you add batter on hot pan it wiil turn into lumps immediately adding on pan. Batter will be cooked immediately and you won’t be able to spread the dosa. • To avoid that, turn off the gas while taking the dosa off the pan, wait for a minute and add next batter for dosa.
